SMOTHER MY BREASTS
"This is my own creation and my family loves it (they also love the name)."
4 Tbsp butter
4 skinless boneless chicken breast halves*
2 cups sliced fresh mushrooms (portabello are great)
4 Tbsp minced shallots, or 1/2 vidalia onion, minced
2 cloves garlic, minced
Sea salt and freshly ground pepper to taste
4 to 6 ozs freshly grated Mozzarella, Parmesan, Cheddar, or Fontina cheese, your choice (or you can place one slice of cheese on each breast).
*Flatten breasts somewhat by pounding, and if they're really thick, slice them in half horizontally.
In a large heavy frying pan, melt butter over medium heat. Add the chicken breasts and cook approx. 3 minutes on each side, or until no pink remains, DO NOT overcook. Remove breasts from pan.
Add the mushrooms, shallots (or onions) and garlic to the pan, adding more butter if necessary; sprinkle with salt and pepper; saute 5 minutes.
Push the mushrooms and onions to the side and add the chicken breasts back into the pan.
Turn off heat and sprinkle breasts with the grated cheese, or place a slice of cheese on top of each breast. Cover and let stand until cheese melts.
