Misc.Grouper with Lemon and Capers
Prep: 5 min, Cook: 10 min.
1 Tbs. olive oil
4 6 ounce skinless grouper fillets
1/2 cup chicken stock
1/2 lemon, cut into 1/4 inch slices and halved
1 tsp. capers, drained
1 Tbs. unsalted butter
1 tsp. parsley, minced
Heat oil in a heavy nonstick skillet over
medium high heat. Saut grouper 3-4 minutes
per side or until fish flakes easily.
Transfer to a platter. Cover and keep warm.
Stir stock, lemon and capers into skillet.
Simmer 2 minutes. Remove from heat. Add
butter and parsley and stir until butter
is melted. Serve sauce over grouper.

Spiced Grouper
Prep: 5 min, Cook: 20 min.
1 Tbs. olive oil
1/2 cup onions, chopped
1 clove garlic, minced
4 6 ounce grouper fillets
1/2 cup dry white wine or vegetable stock
1 Tbs. parsley, chopped
1/2 tsp. basil, or 2 tsp. fresh, chopped
1/2 tsp. cayenne pepper
1/8 tsp. hot red pepper sauce
1 cup tomatoes, peeled, seeded and chopped
1 lemon, cut into wedges
Heat oil in a heavy nonstick skillet over
medium heat. Saut onions and garlic 3-4
minutes or until onion softens. Add fish and
saut about 1 minute per side. Add remaining
ingredients, except lemon. Season with salt
and pepper to taste. Cover and simmer 7-8
minutes or until fish flakes easily.
Serve fish with lemon wedges.

Gourmet Grouper
Ingredients
3/4 cup grated Parmesan cheese
1/2 cup butter or margarine, softened
3 Tablespoons mayonnaise
3 Tablespoons chopped green onions
2 teaspoons chopped fresh chives
Six 8 ounce grouper fillets (about one inch thick)
1/4 cup lemon juice
1/4 teaspoon pepper
lemon slices (optional)
fresh chives (optional)
Combine cheese, margarine, mayonnaise,
green onions, and chives in a small bowl;
stir well, and set aside. Place fillets on a
lightly greased rack in a broiler pan.
Drizzle lemon juice over fillets; sprinkle
with pepper. Broil 6 inches from heat 8 to 10
minutes or until fish flakes easily when
tested with a fork. Remove from oven;
spread tops of fillets with cheese mixture.
Broil an additional 2 minutes or until cheese
is lightly browned and bubbly. Remove fillets
to a serving platter. If desired, garnish with
lemon slices and fresh chives.

Baked Grouper
Ingredients
2 pounds fresh grouper fillets (can be substituted with fresh snapper)
1-2 cups mayonnaise and sour cream. Equal amounts mixed.
1/2 teaspoon cumin
1/2 teaspoon salt (sea salt is recommended)
1/2 teaspoon crushed thyme
1/2 teaspoon rosemary
1/2 teaspoon sage
Cracked pepper
2 Tablespoons key lime or lemon juice
1 large white onion
1 Tablespoon minced garlic
1 Tablespoon olive oil
Heat oven to 350 degrees F. Lightly coat
baking pan with olive oil. Cut onion into
1/4 slices, peel, and place in baking pan.
Lay fish fillets on top of onion. Baste
with lime or lemon. Coat fish generously
with mayonnaise blended with herbs and
spices. Top with cracked pepper. Bake
uncovered until fish flakes easily.
(This depends on the thickness of the
fillets.) Garnish with green herbs.
