SOUR CREAM TUNA LOAF
1 (13 ounce) can tuna, drained
6 slices white bread, crumbled
1 (16 ounce) carton sour cream, divided use
3 eggs, beaten
1 (2 ounce) jar chopped pimiento
2 tablespoons instant minced onion
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
FOR THE SAUCE:
2 cans cream of mushroom soup
1/2 cup grated cheddar cheese
Preheat oven to 350 degrees F. Grease a loaf pan.
In large bowl, mix tuna, bread, half of the sour cream, eggs, pimiento, onion, lemon juice, salt, and pepper. Mix well; place in prepared pan.
Bake at 350 degrees for 45 minutes until set.
TO PREPARE THE SAUCE:
Heat mushroom soup and desired amount of cheese (1/2 cup or more) until bubbly. Remove from heat and blend in remaining sour cream.
Slice loaf and spoon sauce over each serving.
