Here's a useful yeast starter that won't turn sour. My
mother-in-law's has been going for over 10 years. To initiate the starter, add 1 tsp of normal baker's yeast to the following feeding mixture and incubate in a warm place:
3 tbsp instant mashed potato flakes
1/2 cup sugar
1 cup lukewarm water
Every week (or even every few weeks will work), take your starter from its habitual resting place in the refrigerator, let come to room temperature, and add the above mixture (no further yeast needed).
Let stand several hours
(or overnight).
It should get very bubbly.

1 pkg of rapid rise yeast ( or let set out for 7 days. stir
after three days in a warm dark place)
Mix all ingredients in a bowl or large glass jar and
cover loosely with foil. The yeast will feed on the potato
flakes and sugar, and the starter will give off gas as the
yeast breeds. If the container is tightly sealed, the
yeast will die. Keep at room temperature for 24 hrs
then refrigerate.
