Recipe: Chop Suey Loaf (using candied fruit and raisins, bread machine)

CHOP SUEY LOAF

"This loaf is full of mixed candied fruit and raisins. If desired, drizzle with lemon icing after baking. If you have a raisin cycle, use it to notify you when to add the candied fruit and raisins. Due to the sugar and high fruit content, this loaf has a dark coloured crust, so the authors recommend the sweet cycle."

3 1/2 cups all-purpose flour
1/4 cup skim milk powder (instant nonfat dry milk)
2 tbsp granulated sugar
1 1/2 tsp salt
1 cup water
2 eggs
2 tbsp butter
1 1/4 tsp bread machine yeast
1 to 1 1/2 cups mixed diced candied fruit
1/2 cup raisins

Place ingredients, except candied fruit and raisins, in pan of 2 lb bread machine in order recommended by instruction manual.

Select raisin or sweet cycle. Add mixed candied fruit and raisins at the signal.

Makes 1 loaf
