Recipe: Basil-Baked New Potatoes

BASIL-BAKED NEW POTATOES

2 1/2 lbs. new potatoes
3 medium green onions, finely chopped (about 1/2 cup)
2 tbsp. chopped fresh basil leaves (or 2 tsp. dried)
salt and ground black pepper (to taste)
2 tbsp. olive or vegetable oil

Heat oven to 350 degrees F. Prepare a 13-by-9-inch rectangular pan with cooking spray.

Place potatoes in pan. Sprinkle with onions, basil, salt and pepper. Drizzle with oil and stir to coat.

Bake uncovered about 1 hour and 15 minutes, stirring occasionally, until potato skins are crispy and potatoes are tender.

Makes 6 servings
