Southern Chicken Rice, Chicken Pileau, Chicken Bog

This is also called Chicken Pileau or Chicken Bog. This is usually made in big batches and served at outdoor functions.
4 Chicken Breast, boiled and meat removed from bone.
2 cups rice
Sausage, I use little smokies, fried and sliced, polish sausage works as well
1 small onion
1/2 stick butter
Salt and pepper
Boil chicken in water with butter. Save broth. Remove chicken from bone and pull apart into smaller pieces.
Brown sausage in frying pan with chopped onion. Set aside.
Place rice in large pot, add chicken, measure broth to equal 4 cups. If you do not have enough to make 4 cups, use water. Pour into pot with rice and chicken. Add sausage and onion, salt and pepper. Cover. Bring to a boil.
Cut heat to low and cook until rice is dry, about 20-30 minutes.
This is a meal in itself, just open a can of beans and you are done.
