Recipe: Shiitake Rice Pilaf

Shiitake Rice Pilaf

Makes 4-6 servings

3.5 oz dried shiitake mushrooms
1 clove minced garlic
2 tbsp olive oil
2 cups rice
1/2 cup toasted walnut pieces
1/4 cup sliced green onions
1 Tbsp grated lemon peel
salt and pepper to taste

Soak shiitake mushrooms in lukewarm water until tender, remove stems, slice.

Steam the rice (2 cups rice with 3 cups water).

In broad skillet saute the mushrooms and garlic in oil for 1-2 minutes.

Add steamed rice, walnuts, onions and lemon peel, mixing to blend. Season with salt and pepper, heat to warm through.
