Recipe: Southwestern Beans (using bacon, chorizo and cheese)

SOUTHWESTERN BEANS
"Spicy bean dish that would be great with a piece of warm corn bread."

4 slices bacon, diced
8 ounces chorizo sausage
1 large onion, chopped
2 cloves garlic, chopped
1 (15 ounces) can tomato sauce
1 tablespoon Durkee Chili Powder
1/2 teaspoon Durkee Ground Black Pepper
4 cans (15 ounces each) kidney beans, undrained
8 ounces Monterey Jack cheese, diced
1/4 cup chopped fresh cilantro (for garnish)
1 avocado, sliced (for garnish, optional)

Fry bacon in large saucepan until bacon is crisp; pour off all but 2 tablespoons fat.

Add sausage, onions and garlic to pan. Cook until sausage is cooked through and onions are tender.

Stir in tomato sauce, chili powder, black pepper and beans. Simmer 15 to 20 minutes. Just before serving, stir in cheese.

Garnish with cilantro and avocado, if desired.

Makes 6 servings
