Recipe(tried): Mother's Home Baked Beans (from Jack Rabbit Navy Beans package) - found
Side Dishes - BeansI looked for my empty Jack Rabbit navy bean package for years. I found it last evening!
MOTHER'S HOME BAKED BEANS
2 cups (1 lb.) Jack Rabbit Navy Beans (dry beans)
1/2 cup chili sauce
1 teaspoon vinegar
1 medium size onion, sliced
2 cups hot bean liquor (cooking liquid)
1/4 lb. bacon, unsliced
2 teaspoons salt
1/2 teaspoon dry mustard
1/2 cup dark molasses
Sort and rinse beans. Cover with water (2-inches above beans) and soak overnight.*
Add bacon (to beans and soaking liquid); cover; simmer over low heat (do not boil) until just tender (about 1 hour).
Drain; reserve liquor (cooking liquid). Remove bacon and cut in 1-inch cubes.
Pour beans into a 2 quart bean pot or casserole. Bury bacon in beans. Add combined remaining ingredients.
Cover and bake in slow (300 degree F) oven for 6 hours. If necessary, add bean liquor or hot water during baking.
*QUICK SOAK WAY:
Eliminate overnight soak. Sort and rinse beans, cover with water, boil 2 minutes. Remove from heat, soak 1 hour, then proceed with regular recipe.
