Recipe: Spicy Asian-Style Tofu Soup

This is a spicy, "brothy" asian-style soup which makes an excellent first course or accompaniment.

Tofu Soup

10 1/2 oz extra-firm tofu -- frozen and thawed (I imagine you could use meat if you prefer)
2 Tbsp vegetable oil
1/2 c chopped onion
8 cloves minced garlic
2 med jalapeno peppers -- minced
rib celery -- sliced
29 oz vegetable broth
3 1/2 c water
1/4 c soy sauce
2 Tbsp lime juice
1 Tbsp hoisin sauce
1/2 Tbsp chili sauce
1 tsp lemon pepper
1/2 tsp anise seed
1/2 tsp ground ginger
2 mushrooms -- coarsely chopped
1 plum tomato -- peeled and chopped

In large pot, heat oil over medium heat. Add thawed tofu cubes and cook, stirring often, until it begins to brown, about 7 minutes. Add onion, garlic, jalapenos, celery, and 2 to 3 tablespoons broth. Cook, stirring often, until vegetables are softened, about 10 minutes.

Add remaining ingredients and stir to mix. Simmer over low heat to blend flavors, about 20 minutes.
