Recipe: Potato Puffs (using mashed potatoes, beaten egg whites and cheese, baked)

POTATO PUFFS

3 cups mashed potatoes
2 eggs, separated
1 cup hot milk
1 teaspoon parsley
1 teaspoon salt
1 1/2 tablespoons butter (for buttering baking dish)
1/4 cup grated cheese

Add beaten egg yolks to mashed potatoes. Then add milk, parsley and salt; mix together. Fold in stiffly beaten egg whites.

Drop by spoonfuls into a flat buttered baking dish, placing cakes an inch apart. (Greased muffin tins may also be used.) Sprinkle with grated cheese.

Bake at 400 degrees F for 20 minutes.

Makes 6 servings
