SPICY BEEF AND RICE SALAD
2 tsp Spicy Seasoning Mix, divided use (recipe follows)
1 lb boneless beef top sirloin steak, cut 1 inch thick
2 cups Spicy Cooked Rice (recipe follows)
3 green onion, thinly sliced
1 medium red apple, cut into pieces
1/4 cup coarsely chopped walnuts, toasted
leaf lettuce (optional garnish)
Heat large nonstick skillet over medium heat 5 minutes.
Meanwhile rub 1 teaspoon spicy seasoning into both sides of beef steak Place steak in skillet and cook 12-14 minutes for rare (140 degrees F) to medium (160 degrees F), turning once. Season with salt, if desired.
Meanwhile combine rice, onions, apple, and walnuts.
Carve steak into thin slices; arrange over rice mixture. Garnish with leaf lettuce and apple slices, if desired.
SPICY SEASONING MIX
3 tbsp chili powder
2 tsp ground cumin
1 1/2 tsp garlic powder
3/4 tsp dried oregano leaves
1/2 tsp ground red pepper
Combine all ingredients for the Spicy Seasoning Mix. Store, covered, in airtight container. Shake before using to blend. (Makes about 1/3 cup)
SPICY COOKED RICE:
Cook 2/3 cup rice according to package directions; add 1 tsp Spicy Seasoning Mix to water before cooking.
