SPICY RICE AND CHEESE CASSEROLE
3 cups sour cream
1 to 2 cans (4 oz. each) jalapeno peppers, drained
Optional ingredients:
thinly sliced green onions, sliced olives, salsa, etc.
Salt and pepper to taste
4 cups cooked rice, packed
3/4 lb. (12 oz.) cheddar cheese, shredded
Preheat oven to 350 degrees F.
Mix together sour cream, jalapeno peppers, optional ingredients, and salt and pepper to taste.
Spread half the rice in the bottom of 2 quart casserole dish. Cover with half of the sour cream. Cover with half of the cheese. Repeat.
Bake in 350 degree oven until cheese is bubbly.
