SPIEDI SAUCE FOR BEEF OR PORK
2 tablespoons lemon juice
1/2 cup oil
1 tablespoon oregano
1 tablespoon salt
1/2 cup vinegar
4 cloves garlic, chopped
1 tablespoon dried mint (or parsley)
3 pounds cubed beef (or pork)
Mix all ingredients together and marinate at least overnight.
BBQ on grill on skewers (can be done in broiler).
Serve as sandwich on buttered Italian bread.
Notes: Here is another upstate NY specialty. They are called Spiedis and are served on buttered Italian bread. They are marinated cubes of meat, grilled on a skewer and eaten on the bread as a sandwich. I just made up a 2 batches of pork spiedis. I bought a pork loin roast and trimmed the fat and cubed it myself. Made up the marinade, tossed the cubed meat in and packaged it in 2 separate bags and threw them in the freezer. Last time I was at Costco, I found some Italian bread.... something that is hard to find out here in CA. at least like it is back in NY.
