Recipe: Old Portland Post Office Cafe Spinach Salad with Cafe House Dressing

OLD PORTLAND POST OFFICE CAFE
SPINACH SALAD WITH CAFE HOUSE DRESSING

FOR THE SALAD:
2 bunches spinach, washed, torn
3 hard-cooked eggs, peeled and sliced
1/4 pound fresh mushrooms, thinly sliced
3 strips bacon, cooked crisp, broken into bits
1/3 cup sweet onion, finely chopped
FOR THE CAFE HOUSE SALAD DRESSING:
1 teaspoon finely chopped herbs
1/2 teaspoon granulated garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 teaspoon paprika
2 tablespoons molasses
2 dashes Lea and Perrins Worcestershire sauce
1 cup salad oil
1/2 cup red wine vinegar

Top spinach leaves with eggs and mushroom slices, crumbled bacon and onion. Serve with Cafe house dressing.

TO MAKE THE CAFE HOUSE DRESSING:
Mix all dry ingredients. Add molasses and Lea and Perrins. Mix. Add oil and wine vinegar; mix well.
