CELERY TOP AND OLIVE SALAD
2 cups pitted green or ripe olives, chopped
2 cups coarsely chopped celery tops chopped
1 medium onion, chopped (1/2 cup)
1/4 cup olive or vegetable oil
2 tablespoons wine vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cloves garlic, crushed
Combine ingredients in a salad bowl; toss to coat vegetables well with oil and vinegar.
Let stand at room temperature for 2 hours before serving, to improve flavors.
Makes 4 serving
