STRAWBERRY CHEESECAKE
Makes one 13x9-inch cheesecake
1 pkg. Duncan Hines Deluxe II Strawberry Supreme Cake Mix
4 eggs
1 Tablespoon Crisco Oil or Puritan Oil
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1 1/2 cups milk
1 Tablespoon lemon juice
6 drops red food coloring
1 envelope (1 1/2 ounces) whipped topping mix, prepared
Preheat oven to 300 degrees F. Grease a 13x9-inch baking pan.*
Reserve 1 cup of dry cake mix. Combine remaining cake mix, 1 egg and oil in a large bowl (mixture will be crumbly). Press crust mixture evenly into bottom and three-quarters of the way up the sides of prepared pan.
In same bowl, blend cream cheese and sugar. Add 3 eggs and reserved cake mix; beat 1 minute at medium speed. At low speed slowly add milk, lemon juice and food coloring; mix until smooth. Pour into crust.
Bake at 300 degrees F for 45 to 55 minutes or until center is firm.
When cool, spread with whipped topping; chill before serving. Store in refrigerator; freeze covered with foil.
*Cheesecake can also be baked in two 9-inch pans for 40 to 45 minutes.
