This is from Susan Branch's book, Love from the Heart of the Home. She really knows how to celebrate! You can make this with any cookie or graham cracker crust.
STRAWBERRY CHEESECAKE WITH CHCOLATE CRUST
Follow the recipe on the box of Oreo Chocolate Cookie Crumbs for a 9-inch pie crust.
FILLING:
8 ounces cream cheese, softened
1/2 cup sugar
1 Tablespoon lemon juice
1/2 teaspoon vanilla
dash of salt
2 eggs
Beat softened cream cheese till fluffy. Gradually blend in sugar, lemon juice, vanilla & salt. Add eggs, one at a time; beat well after each. Pour filling into crust.
Bake at 325 degrees for 25-30 minutes, till set.
TOPPING:
1 1/2 cups sour cream
3 Tablespoons sugar
3/4 tesapoon vanilla
Combine all ingredietns and spoon over top of hot pie.
Bake 10 minutes more. Cool-chill well.
STRAWBERRY GLAZE:
Cover top of pie with washed and stemmed, perfect, fresh strawberries, pointed end up. Slowly bring 1/2 cup clear red currant jelly or strawberry jelly (clear, no seeds) and 1 teaspoon lemon juice to a slow boil, stirrring.
Spoon or brush glaze over berries-refrigerate.
