LINDA:
Good Evening. This pie you are asking about originated in the north central part of Indiana, because in those early days this pie was made up of simple ingredients that the early settlers could easily get. I have 2 of them for you. Today is SENIOR CITIZENS DAY so everything is 2 for a penny.
SUGAR CREAM PIE
1 cup sugar
1/4 cup plus 2 tablespoons cornstarch
2 1/4 cup milk
1 stick butter
pinch of salt
1 teaspoon vanilla extract
In heavy saucepan over low heat, stir together all but the vanilla. Cook and keep stirring till thickened. (Linda as you know milk scorches easily.)
Stir in vanilla and pour into a pre-baked 9-inch pie shell.
When cooled apply flavorings of your choice from nutmeg to cinnamon to corn-meal.
2ND RECIPE:
5 Tablespoons flour OR 2 1/2 Tablespoons of cornstarch
1 cup sugar
1/4 teaspoon salt
2 1/2 cups heavy whipping cream
Preheat oven to 375 degrees
Mix flour/cornstarch, sugar, and salt together. Add the cream and mix thoroughly. Pour batter into a unbaked 9-inch pie shell.
Bake at 375 for 45 minutesto 60 minutes till bubbly on top. Store pie in the refridge. Top with your favorite topping.
Linda, I hope this does it for you. Good Luck young lady.
