Recipe(tried): SUNDAY DINNER AT OUR HOUSE

Today for lunch we had: marinated sirloin steak (I posted the recipe about two weeks ago),Mama's Cream Corn, zipper cream peas, Cheesy Potatoes, baked Vidalia onions, EZ Banana Pudding, sweet tea with lemon, sliced tomatoes, garlic breadsticks, and CLAUSSEN Pickles.CHEESY POTATOES

4-5 medium potatoes (I used red potatoes) peeled and washed
1 8 oz. pkg. shredded Cheddar cheese (I used low-fat)
4-5 sliced bacon, fried crisp and crumbled
2 onions sliced
salt and pepper

Preheat oven to 350. Line a 9X13" baking pan with aluminum foil and spray generously with PAM. Slice the potatoes and place them on top of the aluminum foil.
Sprinkle the potatoes with salt and pepper. Add sliced onions, crumbled bacon, and cheese. Put a piece of aluminum foil on top and bake for 1 hour-1 hour and 15 minutes until potatoes are done. This is really delicious!MAMA'S CREAM CORN (made easier)

8-10 ears of corn, shucked with all silk removed
1/2-3/4 cup milk
1-2 T. bacon drippings
seasoned salt

Cut the niblets off each corn cob. Scrape the cob after cutting so that the starch will be removed, too. Put all of the corn into a microwave-safe bowl. Add the milk, bacon drippings and seasoned salt. Place plastic wrap on top of the bowl. Microwave at the 70 power setting for 20-25 minutes. Carefully remove the bowl from the microwave and taste. If it doesn't taste done, microwave for 3 minute intervals until it does.

****My mother wouldn't use the microwave to make this corn. However, she did have to stand over it and make sure that it didn't burn even while she used her "seasoned" iron skillet. Using this method, I've never had my corn burn--at least, not yet!EZ LOW-FAT BANANA PUDDING

1 large box Sugar-Free, Fat-Free Jello Instant Vanilla Pudding
3 cups COLD milk (I used 2% milk)
1 box reduced fat Nilla Vanilla Wafers
3-4 ripe bananas

Prepare the pudding using a mixer or a whisk and mix for 2 minutes. Put the pudding into the refrigerator and let set for 5-10 minutes.

In a large bowl, put some vanilla wafers in the bottom. Top with sliced banana. Layer on some of the pudding. Repeat until you have used all of the pudding. Refrigerate until cold. Makes 1 large bowl.BAKED VIDALIA ONIONS

1 Vidalia onion for each person
1 pat of butter
seasoned salt
aluminum foil

Preheat oven to 350. Place each onion in a separate piece of aluminum foil. Top with butter and seasoned slat. Fold the foil so that each onion is in its own "packet." Let bake for at least an hour.
