GREENS WITH GARLIC AND OYSTER SAUCE
1 pound greens, such as chard, mustard or kale
2 tablespoons vegetable oil
2 tablespoons minced garlic
2 tablespoons oyster sauce
About 1/4 teaspoon salt
Remove the thick ends of the stems and chop the greens coarsely into about 2-inch pieces.
Heat the oil in a large heavy skillet over medium-high heat. When hot, add the garlic and saut 30 seconds.
Add the greens and oyster sauce. Toss several times to coat the greens evenly in the sauce. Cook until the greens are done but still green and crunchy, 2 to 3 minutes. Add a little salt to taste. Transfer to plates and serve immediately.
Makes 3 to 4 side-dish servings
