Recipe(tried): SUNDAY DINNER AT OUR HOUSE

Today for lunch we had: Wonderful Pot Roast with gravy, garlic smashed potatoes, rice, zipper cream peas, broccoli salad, No-Fail Biscuits, thinly sliced Vidalia onions and tomatoes, CLAUSSEN Pickles, sweet tea with lemon, and Blue Bell Ice Cream for dessert.

Here are the two new recipes that I tried today:

WONDERFUL POT ROAST

3-4 lb. beef roast (I used a 4 lb. rump roast)
1/2-3/4 cup self-rising flour
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. Old Bay Seasoning
2 T. olive oil

In the AROMA Roaster, I put in the olive oil and let it get to 300 degrees. Put the flour and the seasonings together in a plastic bag and mix thoroughly. If the bag is large enough, put the roast into the plastic bag and coat it thoroughly with the flour mixture. Put the roast into the hot olive oil and brown on all sides. Add:

2 large onions, sliced into rings
1 bunch green onions, chopped
1 red bell pepper, sliced thinly
1 yellow bell pepper, sliced thinly
1 T. minced garlic
1 1/2 cups dry red wine
1/2 cup dry white wine
1/2 cup chicken stock
Salt and pepper to tastePut the vegetables around the roast. Mix the wines and the chicken stock together and pour over the roast. Sprinkle the roast and vegetables with salt and pepper. I cooked the roast and vegetables at 325 degrees for 3 and 1/2 hours. I let the meat "rest" and removed it from the roaster. Slice the meat thinly and pour the gravy on top.

The vegetables will add wonderful flavor to this gravy and the meat will be fork tender.NEVER FAIL BISCUITS

1 3/4 cups self-rising flour
2 T. sugar
1 cup cream

Preheat oven to 400 degrees.
Sift the sugar and flour together. Add the cream and mix thoroughly. Knead the flour mixture about 10 times. You may roll out the mixture and cut with a biscuit cutter. I just dropped the biscuit mixture onto a greased baking sheet. Cook for 15 minutes or until biscuits are lightly brown on the top.

****These biscuits were very, very good. They were light and tasty, but the next time that I make them I am only going to use 1 tablespoon of sugar.
