Recipe(tried): Hemstrought's Bakery Half Moon Cookies - Thanks and a tip
Desserts - Cookies, Brownies, BarsNever had an original Hemstrought's Bakery version of this cookie, but thought it would be lots of fun to make. It was, though it took quite some time. I found that the cookie batter was thin, light and airy, much like a mousse. I piped the first cookie sheet with 8 (3 inch) circles that ended up running together during the baking. From there on, I spooned a heaping tablespoon of the dough, making nice round piles about 1 1/2 inches in diameter. These spread to a nice 3 1/2 - 4 inches in diameter when baked. I would assume (silly me!) that these are supposed to be large cookies (like whoopie pies), but the size I ended up with were nice and easy to handle in the frosting operation and the recipe netted about 60 cookies. Thanks so much for this recipe!
