Recipe(tried): Sunday Dinner at Our House - Cola Baked Ham wth Pineapple Glaze, Mama's Baked Sweet Potatoes

Hello, everyone! This is the second weekend that we have spent at home since Kristin's accident.

She has "graduated" to a boot cast and can walk using crutches or her walker instead of using the wheelchair.

When she went to the doctor last week, he noticed a little "separation" at the front of the ankle. He said that he must have missed it when she had her surgery because her ankle was in such bad shape. Instead of breaking her ankle in three places, she broke it in four! If it starts giving her pain, she will have to have another surgery. Please join me in praying that she won't have to have surgery again!

Back to the topic of today's lunch. We had: baked ham, zipper cream peas, macaroni and cheese, baked sweet potatoes, Mexican cornbread, sweet tea with lemon, Mama's Sweet Potato Pie, and CLAUSSEN Pickles.

I used the AROMA Roaster to make the ham. It was moist and juicy with a wonderful flavor.

BAKED HAM

1 5-7 lb. ham (butt portion is what I usually use)--rinsed well
1 cup Coke
1 cup 7-Up
1 Reynolds' Plastic Cooking Bag
1 T. flour

Preheat roaster (or oven) to 325 degrees.
Shake the flour into the cooking bag so that it won't burst. Put the ham into the bag. Mix Coke and 7-Up together and pour over ham. Make 6 1" slits in the top of the cooking bag.

Place the ham into the roaster (or oven). Cook at 325 for 1 1/2-2 hours or until ham is done.

When ham is done, allow it to "rest" for 30 minutes before cutting into it. Serve with glaze.

GLAZE

1 cup pineapple juice
1/2 cup brown sugar
2 T. yellow mustard
1/2-1 tsp. cornstarch

Whisk the cornstarch and pineapple juice together until well blended.
Dissolve brown sugar in the pineapple juice/cornstarch mixture. Using a whisk, add yellow mustard.

Place in a microwave-safe bowl and microwave on HIGH for 2-3 minutes. If not thick enough, microwave for 2-3 minutes more or until the glaze has thickened to your liking.

MAMA'S BAKED SWEET POTATOES

One sweet potato per person
Canola Oil Spray

Line a cookie sheet with aluminum foil. Preheat oven to 350 degrees. Spray the sweet potatoes with Canola oil and place on cookie sheet. Bake for 1-1 1/2 hours or until a knife can easily be inserted into the middle of a potato.

Half the potatoes just as you would a regular baking potato. Top the sweet potato with butter, brown sugar, and nutmeg--or cinnamon--or pumpkin pie spice. Serve with ham.

I have posted the sweet potato pie recipe before. I baked several sweet potatoes so that I could make pies. In fact, I made four pies this afternoon!
