Recipe(tried): Sunday Dinner at Our House - Debbie's Angel Eggs

Hi, everyone! It seems that it has been weeks since I have posted a menu. During this summer I have taken a leave of absence from the kitchen!!!!!!

Since we started back to school last week, I've gotten back into a "somewhat" normal routine. Today for lunch we had: baked ham, Debbie's Angel Eggs, Mama's Three Bean Salad, macaroni and cheese, Mexican Cornbread, CLAUSSEN Pickles, cantaloupe slices, corn relish, sweet tea with lemon, and Apple Blossoms from Sam's.

DEBBIE'S ANGEL EGGS

1 dozen fresh eggs
4 oz. 1/3 less fat cream cheese
1/2 rib celery, chopped finely
1-2 strips of red bell pepper, chopped finely
2 green onions, chopped finely
1 T. pickle relish

In a large pot, place eggs and cover with cold water. Bring to a rapid boil. Remove the pot from the eye of the stove. Cover the pot and let the eggs cook in the water for 1 hour. When ready to make the eggs, remove the eggs from the water. Place the eggs in cold water. Peel the eggs and cut lengthwise. Put 4 of the yolks of the eggs in a food proccessor along with the cream cheese. Discard the rest of the egg yolks. Process until egg yolk mixture is smooth. Add the vegetables to the yolk mixture. Place about 1 tablespoon of the cream cheese/egg yolk mixture into each egg half. Sprinkle the eggs with seasoned salt. Refrigerate until cool.
