Recipe(tried): Red Pepper Jelly (Refrigerator, no canning process needed)
Preserving - Jams, JelliesThis was one of my Mom's recipes. It's great served over cream cheese with crackers or with brie.
RED PEPPER JELLY
6 large red bell peppers
1/2 pint white vinegar
1 1/2 cups sugar
Wash, grind up and drain peppers. Place in large heavy saucepan. Add vinegar and sugar. Bring to a boil over medium heat. Reduce heat and simmer, uncovered for 45 minutes, stirring occasionally.
Pour into glass container, cool, then cover and store in the refrigerator.
