Recipe: Swedish Potato Sausage for James

Main Dishes - Assorted
SWEDISH POTATO SAUSAGE

2 lbs. lean ground beef
2 lbs. lean ground pork (can use 1/2 ham)
2 lbs. potatoes, peeled
3 medium onions, peeled
2 tbsp. canning salt
1 tsp. ground allspice
1 tsp. white pepper
1/2 cup water (or ham stock)
Sausage casings

Grind beef, pork, potatoes, and onions together with coarse grinder. Add water, salt, allspice, and pepper; mix all ingredients. Stuff in pork sausage casings or shape into patties.

If storing (in refrigerator) more than 2 days freeze it.
