Sweet Cinnamon Quick Bread

Makes 1 loaf
BREAD
2 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 teaspoon salt
1 cup buttermilk*
1/3 cup vegetable oil
2 teaspoons vanilla extract
2 eggs
1/2 cup raisins (optional)
STREUSEL TOPPING
2 tablespoons sugar
1 teaspoon cinnamon
2 teaspoons butter or margarine -- softened
Preheat oven to 350 degrees F. Grease and flour the bottom only of a 9x5-inch loaf pan. In a large bowl, combine all bread ingredients; beat with an electric mixer 3 minutes at medium speed. Pour batter into prepared pan. In a small bowl, combine all topping ingredients until crumbly. Sprinkle over bread batter and swirl with a knife to marble. Bake at 350 F for 45-55 minutes or until a toothpick inserted in the center comes out clean. Remove from pan immediately and cool completely before slicing. Wrap and refrigerate leftover bread.
*Buttermilk may be substituted with 1 tablespoon lemon juice or vinegar and enough milk to make 1 cup.
