Recipe(tried): Brown Sugar Pound Cake with Strawberry Rubarb Sauce - An idea for Kathy, CA

Hi Kathy:-) Like June, I don't think that canned rhubarb would work for a pie but I offer the following recipes for you to consider. I made Strawberry Rhubarb Sauce and served it over Brown Sugar Pound Cake with sweetened whipped cream to take to a potluck. Everyone wanted the recipes so you might enjoy them as well. Perhaps you could use your canned rhubarb in the sauce but omit the water called for, as well as the sugar if your rhubarb is already sweetened. I added fresh blueberries to the sauce at the same time I added the strawberries when I made it. I think you could heat the canned rhubarb, then add everything else. The sugar thickens the sauce. You could also spoon the sauce over plain pound cake, vanilla ice cream, or waffles. It is a tasty and pretty sauce.

STRAWBERRY RHUBARB SAUCE

Makes: 3 cups

1/3 to 1/2 cup sugar, depending on desired tartness
1/3 cup water
1 pound rhubarb stalks, cleaned and diced
1 quart strawberries, cleaned, hulled and halved
(Fresh blueberries - my addition)
1/2 tablespoon lemon juice

In a heavy saucepan over medium heat combine sugar and water. Stir to dissolve sugar. Add rhubarb and allow to simmer for 15 minutes or until tender. Add strawberries and lemon juice and simmer for 10 minutes more. Allow mixture to cool for about 10 minutes.

In batches, if necessary, puree mixture in blender. (I did not puree the sauce. I liked it the way it was.) Add water if mixture appears too thick. Drizzle over yogurt or ice cream or serve with crumpets and sweetened whipped cream.


BROWN SUGAR POUND CAKE

Preheat oven to 325 degrees. Grease and flour pan(s).

Cream together:
1 cup butter, softened
1/2 cup Crisco
Add to this:
1 (1 lb.) box brown sugar
1 cup granulated sugar
6 eggs

Sift together:
3 cups all-purpose flour
1/4 tsp salt
1/2 tsp baking powder

Add dry ingredients to creamed mixture alternately with:
1 cup milk
Then add:
1 tsp. pure vanilla extract
1/4 tsp. almond extract

Bake at 325 degrees F for 1 1/4 hours or until a toothpick inserted in the center comes out clean.
