Recipe: Sweet Onion Relish for Hot Dogs/Vidalia Onion Relish

these are not mr. food's recipes, but being from vidalia, what kind of woman would i be without a recipe or two for onion relish? enjoy.

SWEET PICKLED ONION RELISH FOR HOT DOGS
4 1/4 c. onions
1 c. sugar
1 1/2 tsp. salt
1 c. white vinegar
Chop onions and cover with boiling water. Let stand for 5 minutes; drain well. Add sugar, salt and vinegar; mix well. Simmer 25 minutes. DO NOT BOIL! Let cool and place in jar in refrigerator. Lasts forever. Great on chili dogs!

SWEET VIDALIA ONION RELISH
2 lg. Vidalia onions
2 bell peppers
4 lg. squash (yellow summer squash)
Grind all ingredients. Soak in water covered with ice cubes. Let soak 2 hours; drain; rinse 3 times. Mix: 2 1/2 c. vinegar 2 tsp. turmeric 2 tbsp. celery seed Boil 5 minutes. Add onion, pepper and squash mixture. Cook 10 minutes. Put in pint jars and seal while hot. Yield: 5 pints.
