Sweet Potato Crunch

2 cups crushed pretzels
2 sticks butter, softened
1 (8 ounce) pkg cream cheese, softened
1 cup sugar
1 (8 ounce) Cool Whip
3 cups cooked and mashed sweet potatoes
1 cup sugar
1 egg, beaten
1/2 cup (1 stick) melted butter
1 tablespoon vanilla extract
Mix pretzels and butter and press into a large casserole dish. Bake 12-15 minutes at 350 degrees. Cool completely.
2nd layer: Mix cream cheese, sugar and cool whip and spread over cooled pretzel layer
3rd layer: Mix cooked and mashed sweet potatoes, sugar and egg, with melted butter
Cook this mixture, either in microwave or on top of stove just until bubbly to cook egg. Remove from heat and add vanilla extract. Cool this mixture and spread over the cream cheese layer. Top with cool whip.
Chopped pecans can be added to the pretzel layer and sprinkled on top.
