KEY LIME BITES
"The taste of that oh-so-refreshing pie in a cookie!"
3/4 cup butter, softened
1 cup powdered sugar, divided use
2 tbsp. lime juice
zest of 2 limes
1 tbsp. vanilla extract
1 3/4 cups plus 2 tbsp. all-purpose flour
2 tbsp. cornstarch
1/2 tsp. salt
Cream butter and 1/3 cup powdered sugar until fluffy. Blend in lime juice, zest and vanilla; set aside.
In a separate bowl, whisk together flour, cornstarch and salt: add to butter mixture, stirring until combined. Roll dough into a log shape and chill for one hour.
WHEN READY TO BAKE:
Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
Slice log into 1/8-inch thick rounds; place on parchment-Lined baking sheets.
Bake at 350 degrees for 11 to 14 minutes or until slightly golden. Remove cookies from oven and allow to cool for several minutes.
Place remaining powdered sugar in a large plastic bag. While still warm, place cookies in bag with powdered sugar; toss gently to coat.
Makes 2 dozen
