Recipe(tried): SWEETish Meatballs

My mother learned this from her 1st husband's wife who taught it to my father that taught it to me...it's a great, sweet, kosher, dairy-less meal.

SWEETish Meatballs

2 lbs of ground beef (I use 1 1/2 lbs of beef and 1lb of turkey...they don't know the difference)
1/2 cup chopped onion (optional)
1 cup bread crumbs
2 teaspoons salt (optional)
1/8 teaspoon ground black pepper
2 egg whites
1 egg yolk
2 16oz cans of jellied cranberry sauce
2 16oz cans of tomato sauce
1 tsp of a light oil, or cooking spray

In a duch oven blend the cranberry and tomato sauces. Cook over a high heat to boil. Then in a big bowl, add the meat, onion, bread crumbs, salt, pepper, and eggs. Blend until thoroughly mixed (just dig right in there). Form meatballs about 1 inch diameter. Braze meatball lightly in a non-stick pan and add oil (brazing optional.. this is only to keep them toghether while cooking in the sauce.) Add meatballs to the sauce and simmer on low heat for about an hour. Stir often and don't let them burn on the bottom, it will ruin the taste. Serve over egg noodles....serves 6-8....happy eating

tip:
if you freeze your meat, let thaw thoroughly, if not your meatballs will not stick together well. I reccomend putting frozen meat in a ziploc and placing it in a sinkful of hot water and letting thaw there, replacing every once in awhile with fresh water
