Recipe: Swiss Steak

Main Dishes - Beef and Other Meats
SWISS STEAK

2 to 2 1/2 beef round steak, cut 1/2 to 3/4 inch thick
1/4 cup all purpose flour
1 tsp salt
1/4 tsp pepper
1 to 2 tbsp oil
1 large onion, sliced
1 (8 oz) can (1 cup) tomatoes, undrained, cut up
1 (8 oz) can (1 cup) tomato sauce

Cut meat into serving pieces.

In small bowl, combine flour, salt and pepper. Coat meat with seasoned flour (use all the flour) In large skillet, brown meat in hot oil. Add remaining ingredients.

Cover, simmer 1 1/4 to 1 1/2 hours or until meat is tender.

Serve with potatoes or noodles. 6 servings.

TIPS:
If desired, substitude one (10 1/2 oz) can condensed tomato soup and 1/2 cup water for tomatoes and tomato sauce.

Vegetables such as peas, beans or mushrooms can be added to swiss steak. Add peas and beans toward end of cooking; add mushrooms with onion.
