TACO CASSEROLE
1/4 cup chopped onion
1/2 pound lean ground beef
1 (7-ounce) can whole kernel corn with red and green bell peppers
1/4 teaspoon salt
1/8 teaspoon rosemary
1/8 teaspoon oregano
1/8 teaspoon marjoram
1 (8-ounce) can tomato sauce
2 tablespoons bottled red taco hot sauce
2 corn tortillas
1 cup grated sharp cheddar cheese
Saute onion and beef until beef is browned. Add corn, salt, herbs and sauces.
Lay 1 tortilla in bottom of 1 1/2 -quart baking dish. Add 1/2 of beef mixture and sprinkle with 1/2 cup cheese. Repeat.
Bake in 350 degree F oven 15 minutes.
Makes 2-3 servings
