OLD TIMER
TANYA'S NEVER FAIL CAKE
(Tanya was only 12 when she gave me this)!
2 Eggs
187.5 ml sugar (2/3rds cup)
375 ml flour (1 1/3rd cup)
45 ml butter or marge (3 Tablespoons) [soft but not melted]
60 ml milk (1/4 cup)
60 ml boiling water (1/4 cup)
5 ml vanilla or almond essence (1 teaspoon)
15 ml baking powder (3 teaspoons)
Prepare a receptacle of ANY type, as long as obviously, it is oven proof. If it is stainless steel, use 'spray & cook' aerosol or a thin layer of butter/margarine to line the bottom of receptacle, and the sides.
Combine all the ingredients in a mixing bowl, except the baking powder, and beat for two minutes with a hand held electric beater or 5 minutes by hand.
Now beat in the baking powder and pour into the prepared tin.
Bake at 190 degrees C (375 degrees F) for 25 minutes.
Add your own covering.
Suggest molten chocolate with pine kernels sprinkled on top; as best performer. Also try a topping of custard & banana. Slice cake horizontally with a bread knife, and use tinned pre-manufactured caramel for re-joining the two halves, and top with chocolate, caramel, icing sugar or molasses (but for molasses - serve immediately, else soggy)
