TASTES LIKE APPLES ZUCCHINI COBBLER
FOR THE FILLING:
8 cups sliced zucchini
2/3 cup lemon juice
2 1/2 cups sugar, divided use
2 tsp. ground cinnamon, divided use
1/2 tsp. ground nutmeg
FOR THE CRUST:
4 cups flour
1 1/2 cups sugar
3 sticks (1 1/2 cups) butter, melted
TO PREPARE THE FILLING:
Place the zucchini and lemon juice in a saucepan and simmer for 30 minutes, or until tender.
Add 1 cup sugar, 1 teaspoon cinnamon, and nutmeg; simmer 1 minute; set aside.
TO PREPARE THE CRUST:
Preheat oven to 350 degrees F.
Mix the remaining 1 1/2 cups sugar, flour, and butter together until crumbly. Spread half of the crust mixture in 11x16 inch baking pan. Set the remaining crust mixture aside.
TO PREPARE THE COBBLER:
Bake the crust in the pan for 10 minutes at 350 degrees F.
Place filling over baked crust. Add the remaining 1 teaspoon cinnamon to other half of crust and sprinkle on top of filling.
Return to oven and bake for an additional 30 minutes.
