THAI STIR FRY
1 (1 lb) package chicken breast tenders
1 tablespoon oil
1/2 cup red and yellow bell peppers strips
1 clove garlic, minced
1 tablespoon chopped fresh cilantro
1 teaspoon grated fresh ginger
2 tablespoons reduced sodium soy sauce
1 teaspoon brown sugar
Hot cooked rice or lo mein noodles (for serving)
Heat oil in large skillet over medium heat until hot. Cook and stir chicken about 6 minutes on each side or until golden brown.
Add bell peppers, garlic, cilantro, ginger, soy sauce and brown sugar to skillet. Reduce heat to low; cover and simmer 4 minutes longer.
Serve over rice or lo mein noodles, if desired.
Makes 4 servings
