Recipe: Toasted Nut Truffles

TOASTED NUT TRUFFLES

1/2 cup evaporated milk
1/4 cup sugar
1 (12 oz.) pkg. chocolate chips
1 tsp. almond extract
1 cup finely chopped almonds or pecans, toasted

In a small saucepan, combine evaporated milk and sugar. Over medium high heat, bring mixture to a rolling boil. Boil for 3 minutes, stirring constantly. Remove from heat.

Stir in chocolate chips and almond extract until chips are melted and mixture is smooth.

Cover and chill for 45 minutes.

Shape into 1 inch balls. Roll in almonds.

Chill for 1 hour, or until ready to serve.
