Recipe: Double Good Fudge (chunky peanut butter and chocolate layers) (microwave)

2 pkg (16 oz each) powdered sugar, sifted, divided use
1 cup chunky peanut butter
1/2 cup plus 2 tbsp milk, divided use
1 1/2 tsp vanilla, divided use
1/2 cup butter
1/2 cup unsweetened cocoa powder
1 tsp vanilla
Coat eight (4 oz each) shallow baking dishes* with nonstick cooking spray; set aside.
TO MAKE THE PEANUT BUTTER LAYER:
Combine 1 package powdered sugar, chunky peanut butter, and 1/4 cup plus 2 tbsp milk in a large microwave-safe bowl, stirring well. Add 1/2 tsp vanilla; stir until smooth. Cover with wax paper and Microwave at HIGH 2 to 3 minutes.
Spread evenly into prepared dishes.
TO MAKE THE CHOCOLATE LAYER:
Place 1/2 cup butter in a separate microwave-safe bowl. Microwave at HIGH 1 minute or until melted. Stir in the remaining package of powdered sugar, the remaining 1/4 cup milk, and 1/2 cup cocoa. Cover with wax paper and microwave at Medium-High (70% power) for 2 to 3 minutes. Add the remaining 1 teaspoon vanilla; stir until smooth.
Spread chocolate mixture evenly over peanut butter layer; cool.
*The two layers of fudge may be poured into a buttered 9-inch square baking pan or dish, if desired.
Makes 3 1/4 pounds
