Susan - Oh dear, I am only reading this Father's Day morning, but I hope you tried it anyway. I like a mild tasting oil, like canola. Unless, your olive oil is "light," it might impart some flavor that would take away from the flavor of the pudding. Sorry I did not get back to you earlier.
