Recipe(tried): Tonights Dinner... New Recipe - A WINNER - Crab-Topped Fish Fillets

Tonight for dinner I tried the Crab-Topped Fish Fillets featured in the latest issue of Taste of Home magazine. DH declared "this is awesome" and this from a guy that really dosen't like fish. I will post for those that do not get this magazine.

Crab-Topped Fish Fillets

1 pound sole, orange roughy or cod fillets
1 can (6 oz.) crabmeat, drained, flaked and cartilage removed or 1 cup imitation crabmeat, chopped
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
1 tsp. lemon juice
Paprika, optional
1/3 cup slivered almonds, toasted

Place fillets in a greased 8-in. square baking dish. Bake, uncovered, at 350 deg. for 18-22 min. or until fish flakes easily with a fork. Meanwhile, in a bowl, combine the crab,Parmesan cheese, mayonnaise and lemon juice.

Drain cooking juices from baking dish; spoon crab mixture over fillets. Broil 5 inches from the heat for 5 minutes or until topping is lightly browned. Sprinkle with paprika, if desired and almonds(a must!)

I served this with Buffet Cheesy Potatoes which I will not post as it is almost identical to Gina's Gourmet Potatoes that she posted yesterday however, next time I think I would choose a plainer potato (perhaps little steamed redskins). We also had a tossed salad with spring greens and we will have our Hershey Bar Cream Pie later this evening. I have posted this wonderful pie recipe before but if anyone did not get it...let me know and I will post it again. Have a good evening, everyone!
