BANANA LOAF
1 1/2 cups sifted all- purpose flour*
2/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1 1/4 teaspoons salt
3/4 cup Quaker Oats (quick or old fashioned, uncooked)
1/4 cup vegetable oil (or melted shortening)
2 eggs, beaten
1/3 cup buttermilk
1 cup mashed banana
Sift together flour, sugar, baking powder, baking soda and salt. Stir in oats. Add oil, eggs, milk and banana, stirring only until dry ingredients are blended. Fill a greased loaf pan 1/2 full.
Bake in preheated moderate oven (350 degrees F) 50 to 60 minutes. Remove from pan immediately; cool.
For ease in slicing, wrap cooled bread and store one day.
*lf self-rising flour is used leave out baking powder and salt.
