TRIPLE BEAN COMBO
1 (15 1/2-ounce) can garbanzo beans, rinsed and drained
1 (15 1/4-ounce) can each: kidney beans and green lima beans, rinsed and drained
1 (14 1/2-ounce) can Hunt's Choice-Cut Diced Tomatoes with Italian Style Herbs, undrained
2/3 cup each chopped red and yellow bell pepper
1/4 cup diced red onion
1/4 cup chopped fresh parsley
1 teaspoon crushed fresh garlic
1/2 teaspoon salt
1/4 teaspoon coarse ground pepper
Fresh cilantro sprigs for garnish
In medium-size saucepan combine all ingredients except cilantro sprigs; mix well. Bring mixture to boil, stirring occasionally. Reduce heat. Cover and simmer 15 minutes or until vegetables are tender, stirring occasionally. Garnish with cilantro sprigs.
Makes 8 servings
