Recipe(tried): Pinto Beans (stovetop or pressure cooker)

Side Dishes - Beans
PINTO BEANS

2 lb. pinto beans, picked over and washed
2 smoked ham hocks
1 large onion, chopped
1 clove of garlic, crushed
1 Tbsp. brown sugar
1 Tbsp. molasses
salt and pepper to taste.

Combine beans, ham hocks, onion, and garlic, with double the water to beans. Bring this to a vigorous boil. Turn down the heat and let simmer for 3 to 4 hours, stirring occasionally for even cooking. You may need to add water while they're cooking so you'll have plenty of juice with the beans.

Thirty minutes or so before serving, add brown sugar, molasses, and salt and pepper.

IF USING A PRESSURE COOKER:
I pressure cook them for 45 minutes with the onion, garlic, and ham hocks. I let the pressure down, add the salt and pepper, brown sugar and molasses, then pressure for another 10 to 15 minutes. These are excellent beans. Enjoy!
