Recipe(tried): Tropical Fruit Jam

Tropical Fruit Jam

2 ripe bananas
1/2 cup drained, chopped maraschino cherries
1 1/2 lb. ripe peaches (5)
4 c. sugar
1 box powdered fruit pectin

Mash banans to fine pulp.
Chop cherries fine.
Pare and pit peaches, then chop fine or grind.
Combine fruits and measure 3 1/2 cups of fruit mixture into large saucepan.
Measure sugar and set aside.
Place saucepan holding fruit over high heat.
Add pectin and stir until a hard boil.
Stir in suagr at once. Bring to a rolling boil and boil for one minute.
Stir constantly. Remove from heat, skim foam from jam, and immediately ladle hot jam into hot sterilized jam/jelly jars to within 1/2 inch from top of jar and top with lids and rings which have been sterilized and sitting in hot water. Hand tighten down, invert for 10 minutes, then bring back to normal position and wait for "ping" of lid, letting you know jars have vacuum sealed.
