Recipe: Cranberry Coffee Cake

CRANBERRY COFFEE CAKE

1 (8 oz.) pkg. cream cheese, softened
1 c. butter
1 1/2 c. sugar
4 eggs
2 1/4 c. flour, divided use
1 1/2 tsp. baking powder
2 c. fresh cranberries
1/2 c. chopped nuts
Powdered sugar

Preheat oven to 350 degrees F. Grease and flour a Bundt pan.

Cream together first 4 ingredients. Add eggs 1 at a time, mixing well after each addition. Gradually add 2 cups flour and baking powder.

Combine remaining 1/4 cup flour with cranberries and nuts. Fold into batter. Pour into prepared pan.

Bake at 350 degrees F for 1 hour and 15 minutes. Let stand for 5 minutes before removing from pan. Dust with powdered sugar. (Looks great and needs no extra butter).
