YUCA WITH TOMATILLO SAUCE
Serve this as a side dish instead of potatoes.
2 to 3 pieces of yuca, (each yuca root about ten inches in length)
1/4 cup olive oil
a big handful of cilantro, leaves and stems
2 tomatillos, cut in half
4 cloves garlic
2 to 3 tsp. of lime juice
salt and pepper to taste
TO PREPARE THE YUCA:
Peel the bark from the yuca. Should be white in color, like a potato. Cut yuca into 4-inch sections. Put yuca into a large pan of salted water. Water should be about 1/2-inch above the yuca. Bring to a rapid boil. Cook for about 30 minutes. Check for tenderness with a fork. When soft, like a potato, remove from heat. Set aside for the moment.
FOR THE SAUCE:
Add the remaining ingredients into a food processor. Process till smooth.
TO SERVE:
Place yuca into a large bowl, split each piece in half, and remove the stringy hard core found in the center. Pour the sauce over the yuca, and enjoy.
I use salt and pepper, after the yuca is in my plate.
