Recipe(tried): Tuesday's Dinner - Sam's Grilled Sandwiches, Creamy White Bean Soup with Leeks
Menus We had soup and grilled sandwiches for dinner. Yum!
Sam's Grill
serves 2
4 slices rye bread
1/4 to 1/2 lb. Black Forest deli ham, sliced thin
4 slices deli Swiss cheese
1 (8 oz.) package fresh mushrooms, sliced
1/2 red onion, sliced
1 teaspoon olive oil
1 tablespoon mayonnaise
2 teaspoons dijon mustard
1/4 teaspoon dill weed
Saute mushrooms and onion in a teaspoon of olive oil over medium high heat unitl all liquid is gone and it starts to dry out. Season with salt and pepper and set aside. Mix mayo, mustard and dill together in a small bowl, set aside. On one slice of bread lay down a peice of cheese top with ham and some mushroom and onion mixture then another slice of cheese top with bread. Repeat with remaining ingredients. I used my George Foreman to grill these but you can also grill them on top of the stove. After the cheese has melted and the sandwhiches are a golden brown on both sides remove from pan take off one slice of bread and spread on the mayo mixture. You're all set to eat!
This is my own creation, after making it once my DH was hooked and requested that it be named after him. :)
Creamy White Bean Soup with Leeks
Serves 4
3 19 oz. cans white beans, drained & rinsed well
1/4 tsp. dried tarragon
2 cups chicken broth
2 cups leeks, washed well and sliced (white & light green parts only)
3 garlic cloves, minced
1/4 tsp. red chili flakes, or to taste
3 Tbsp. olive oil
3/4 cup half & half (I used whole milk)
1 Tbsp. fresh lemon juice
In a blender puree the beans with the broth and tarragon in batches and set aside. In a soup pot cook the leeks, garlic and chili flakes over med-low heat until leeks are softened and starting to turn golden brown. Add the puree, the half & half, lemon juice and salt to taste then simmer the soup stirring for 5 minutes.
